A somewhat healthy and cheap weeknight meal. Pair with white rice and veggies
Chicken thighs work too
More is always better
Add some orange zest for more orange flavor

Add the orange juice, soy sauce, lemon juice, crushed red pepper, and brown sugar to a mixing bowl. Add in 1 tbsp of the cornstarch
Mince the garlic and grate the ginger and add it to the mixing bowl.
Whisk the sauce thoroughly and set aside.
Pat the chicken dry and then cut it into small cubes.
Tip: half an inch should be fine
Add 4 tbsp of cornstarch and salt and pepper to taste to a bowl.
Add the cubed chicken to the bowl and mix thoroughly.
Turn a pan and to medium high heat for 3-5 minutes.
Tip: make sure it’s hot hot
Separate the chicken into batches and split the olive oil proportionally. Add the olive oil and then the chicken. Cook for 3-4 minutes on each side until golden brown
Tip: depending on the pan size, 3 batches of chicken should be enough to avoid overcrowding.
Set aside chicken as the batches finish.
Pour the sauce into the pan on medium heat. Cook for 3-5 minutes or until the sauce bubbles and thickens
Add the chicken to the sauce and cook for 3 more minutes.
